Extraction and Characterization of Pectin from Snot Apple (<i>Azanza garckeana</i>) Fruits with Potential Use in Zimbabwe

Azanza garckeana (snot apple) is an underutilized indigenous fruit of southern Africa. The study was aimed at determining the functional characteristics and potential use extracted pectin from A. fruits Zimbabwe. were collected a semi-arid communal area Nhema, Pectin properties determined using standard methods. Fruit jam formulated with 53% (w/v) U. kirkiana pulp, 45% sugar, 1.5% pectin, 0.5% citric acid. optimum extraction conditions 90°C for 90 minutes pH 3. yield 9.21 ± 0.1% to 18.1 10.1 0.1 20.2 0.2% dried fresh respectively. Physicochemical (% w/w) degree esterification (DE) 72.1–80.3, methoxyl content 6.1–6.8, anhydrouronic acid (AUA) 60.3–67.6, moisture 3.1–2.2, ash 0.9–0.7 fruits. Equivalent weight range 816.7–848.2 mg/mol. Jam had total soluble solids (68.2 0.1%), titratable (2.1 0.2 g/L), (32.6 1.3%) (3.4 0.1). Jam’s overall acceptance score 6. There no significant difference in aroma, spreadability, taste, texture both jams P < 0 .05. has good functionality applications food processing, especially production.
